Ingredients
110g oats
125g applesauce
125g oat milk
5g lemon juice
15g maple syrup
½ tsp baking powder
½ tsp baking soda
¼ teaspoon salt
¼ tsp cinnamon (optional – this helps to keep the blood sugar stable when added to sweet things)
1 tsp vanilla extract

About the chef
Chirene is based in Midrand and is a nutrition coach, personal trainer and HUGE fan of Thermomix! She follows a whole food, plant-based lifestyle and uses her Thermomix for absolutely everything (she even makes her body lotion in it). She has also recently started making healthy meals for people, which she would never even have considered BT (Before Thermomix)
Instructions
- Place oats into mixing bowl and blitz for 30 seconds, speed 9
- Scrape down mixing bowl
- Add all other ingredients and blend 5 seconds, speed 4
- Heat a non-stick pan over medium-high heat
- Pour some of the batter into the pan and smooth it into a circle.
- Cook for 2-3 minutes until the spatula can fit underneath without sticking.
- Flip over and cook for another 2-3 minutes
- Top with desired toppings
