Ingredients
- 1010 g water, divided
- 30 g lemon juice, plus 1 tbsp to drizzle
- 225 g butter, unsalted, in pieces
- 4 egg yolks, from large eggs
- 1 tsp salt, divided, plus extra to season, to taste
- 1 pinch black pepper, ground, plus extra to season, to taste
- 30 g cilantro, fresh or 30 g parsley leaves, fresh
- 1 lemon, thin peel only, no white pith
- 285 g rice, white, type jasmine
- 1 tsp onion powder
- ½ tsp garlic powder
- 340 g asparagus, trimmed or 340 g broccoli florets
- 450 g salmon fillet, fresh, skinless, wild caught sockeye salmon (3 cm thick)

Instructions
- Place first bowl into position. Place 15 g water, lemon juice, butter, egg yolks, ½ tsp salt, and pepper into mixing bowl and cook Thicken /80°C. Set mixing bowl with Hollandaise aside and keep warm.
- Place second bowl into position. Place cilantro and lemon peel into mixing bowl and chop 20 sec/speed 10. Transfer to a bowl and set aside.
- Place simmering basket onto mixing bowl lid and weigh in rice. Remove simmering basket, thoroughly rinse rice under cool water until water runs clear and set aside.
- Place 995 g water into mixing bowl. Insert simmering basket with rinsed rice. Add to rice, onion powder, garlic powder and ½ tsp salt, toss with spatula to combine and mix 10 sec/speed 7.
- Set Varoma dish into position and weigh in asparagus. Insert Varoma tray, weigh in salmon, season to taste with salt and pepper, drizzle with lemon juice, secure Varoma lid and steam 17 min/Varoma/speed 3 or until salmon is cooked to your liking. Remove Varoma and set aside. Remove simmering basket with spatula, transfer steamed rice to a bowl and toss with reserved cilantro-lemon mixture. Serve salmon over rice, with asparagus, drizzle with hollandaise sauce and serve remaining sauce on the side.
