Hints and Tips
- Make your own sugar syrup in your Thermomix®. Place 250 g sugar and 250 g water in mixing bowl. Place measuring cup on mixing bowl lid and heat 15 min/Varoma//speed 1. Pour into a sterilised bottle and allow to cool before storing in the fridge.
Ingredients
- 900 g ice cubes
- 30 - 40 fresh mint leaves (approx. 20 g), plus 4 sprigs for garnishing
- 2 limes, quartered
- 150 g white rum
- 125 g pomegranate juice
- 125 g soda water, plus extra for serving if desired
- 80 g sugar syrup (see tip)
- 30 g pomegranate seeds

Instructions
- Place 600 g ice cubes in mixing bowl and, with aid of spatula, crush 25 sec/speed 4. Divide between 4 glasses.
- Place mint leaves and limes in mixing bowl then bruise 20 sec//speed 4. Scrape down sides of mixing bowl with spatula.
- Add remaining 300 g ice cubes, white rum, pomegranate juice, soda water and sugar syrup then mix 5 sec//speed 4.
- Insert simmering basket, hold in place with spatula and strain cocktail over the crushed ice in glasses. Divide pomegranate seeds between glasses and garnish with sprigs of mint. Stir with a straw before serving, adding more soda water to taste, if desired.
