- Mealie is the South African word for corn. This bread is traditionally served at a South African braai (barbecue).
- Maize meal (also known as mealie or mielie meal) can be found in the international aisle of supermarkets or in speciality food stores.

Ingredients
- 60 g vegetable oil, plus extra to grease
- 200 g milk
- 2 eggs
- 140 g plain flour
- 170 g maize meal (see Tips)
- 1 tbsp baking powder
- ½ tsp sea salt
- 420 g canned corn kernels, rinsed and drained (approx. 250 g)
- Butter, to serve
Instructions
- Preheat oven to 170°C. Grease a loaf tin (25 x 10 x 7 cm) with oil and set aside.
- Place milk, oil, eggs, flour, maize meal, baking powder and salt into mixing bowl, then mix 3 sec/speed 4. Scrape down sides of mixing bowl with spatula and mix for a further 5 sec/speed 4.
- Add corn and combine 3 sec/speed 4 or until mixed. Pour batter into prepared bread tin and bake for 45 minutes (170°C) or until a wooden skewer inserted into the centre of the loaf comes out clean. Set bread aside in the tin for 5 minutes, then turn out onto a wire rack to cool slightly before slicing to serve warm, with butter.
