Ingredients
Fruit Ice Cubes
- mixed fresh berries, (a selection of raspberries, blackberries and blueberries)
- water
Tea
- 800 g water, cold
- 6 green tea teabags
Honey and Mint Syrup
- 30 g fresh mint leaves
- 100 g granulated sugar
- 80 g honey
- 180 g water
- 50 g lemon juice (approx. 2 lemons)

Iced Tea with a Honey and Mint Syrup
Instructions
Fruit Ice Cubes
Place 2-3 mixed berries and 1 small mint leaf in each hole of 2 ice cube trays. Top up with water then freeze until solid.
Tea
- Place 1500 g water in mixing bowl and heat 9 min/80°C/speed 2 (see tip).
- Add teabags then mix 15 sec//speed . Transfer to a large jug and leave to steep for 5 minutes then remove teabags.
- Weigh 500 g cold water into mixing bowl then add to tea in jug. Mix together then, when cool, place in fridge to chill.
- Meanwhile, prepare honey and mint syrup.
Honey and Mint Syrup
- Place mint in mixing bowl and chop 3 sec/speed 8.
- Add sugar, honey, water and lemon juice then, with simmering basket in place of measuring cup on mixing bowl lid, reduce 15 min/Varoma//speed 0.5. Strain through simmering basket into a jug and set aside to cool.
To Serve
When ice cubes are frozen and tea is chilled, divide ice cubes between serving glasses. Add cooled syrup to cold tea and stir together then pour over ice. Serve with a sprig of mint for garnish.
