- Flaounes are a traditional Cypriot Easter bread. Both sweet and savoury, these cheese filled pastries are typically prepared by the whole family on Good Friday as part of the Easter celebrations.
- Kefalotyri is a hard, salty white cheese made from sheep's milk and/or goat's milk in Greece and Cyprus.
Ingredients
Pastry
- ½ Tbsp granulated sugar
- 100 g whole milk
- 60 g water
- 1 ½ tsp baking powder
- ⅛ tsp ground cloves
- ¼ tsp ground cinnamon
- 2 pinches fine sea salt
- 380 g plain flour
- 100 g unsalted butter, diced, plus extra for greasing
- 50 g olive oil
Filling
- ¼ tsp ground cinnamon
- ⅛ tsp ground cloves
- 10 g fresh mint, leaves only
- 175 g halloumi cheese, cut in pieces
- 200 g kefalotyri cheese, cut in pieces
- 50 g Cheddar cheese (mild), cut in pieces
- 20 g polenta
- 60 g sultanas (optional)
- ½ tsp baking powder
- ¼ tsp granulated sugar
- 4 medium eggs, 1 beaten for glazing
- 1 ½ Tbsp sesame seeds

Instructions
Pastry
- Place sugar, milk and water in mixing bowl then warm 2 min/37°C/speed 2. Meanwhile, grease a large bowl and line a large baking tray with baking paper.
- Add baking powder, cloves, cinnamon, salt, flour, butter and oil then mix 10 sec/speed 5. Scrape down sides of mixing bowl with spatula then knead Dough /3 min. Transfer to prepared bowl and leave to rise in a warm place for 15 minutes. Preheat oven to 180°C then prepare filling.
Filling
- Place cinnamon, cloves, mint, halloumi, kefalotyri and Cheddar in mixing bowl then grate 6 sec/speed 7.

Add polenta, sultanas (if using), baking powder, sugar and 3 eggs then mix 3 sec
/speed 5. Divide into 12 pieces and roll into balls. - Divide rested dough into 12 pieces. Roll each into a square (approx. 8 cm).
- Place a cheese ball in the centre of each square then fold the sides up to almost cover the cheese. Place parcels on prepared baking tray.
- Brush a beaten egg over parcels then sprinkle with sesame seeds.
- Bake for 20 minutes (180°C) then cover with foil and bake for a further 10-15 minutes (180°C) until golden and cooked. Serve warm or cold.
