Ingredients
Quinoa patties
- 130 g tri-colour quinoa
- 850 g water
- ½ tsp salt
- 80 g Gruyère cheese, cut into pieces (2 cm)
- 40 g chickpea (besan) flour
- 3 eggs
- 30 g white chia seeds
- 2 spring onions/shallots, cut into thin slices (3 mm)
- ¼ tsp ground black pepper
- olive oil, for frying
Smashed avocado
- 2 avocados, flesh only
- ½ lime, juice only
- 1 pinch salt
Poached eggs
- 1600 g water
- 30 g white vinegar
- oil, for brushing
- 4 eggs
- balsamic glaze, to serve
- fresh flat-leaf parsley, to serve

Instructions
Quinoa patties
- Place simmering basket onto mixing bowl lid and weigh quinoa into it. Rest simmering basket in a large bowl. Cover with water and allow to soak for 5 minutes. Rinse under running water until water runs clear.
- Place water and ¼ teaspoon of the salt into mixing bowl. Insert simmering basket with quinoa into mixing bowl and cook 15-20 min/Varoma/speed 1, until quinoa is cooked. Remove simmering basket with aid of spatula and set quinoa aside. Clean and dry mixing bowl.
- Place cheese into mixing bowl and chop 5 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Place cheese into mixing bowl and chop 5 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Place a large frying pan over medium heat and add oil. Divide mixture into 8 portions (approx. 2 tablespoons each) and shape into patties. Working in batches, fry patties for 7-8 minutes on each side or until golden. Transfer into a thermal serving bowl or onto a plate and cover to keep warm. Clean and dry mixing bowl.
Smashed avocado
- Place avocado, lime and salt into mixing bowl and chop 5 sec/speed 4. Transfer into a bowl and set aside. Rinse mixing bowl.
Poached eggs
- Place a paper towel on a plate and set aside. Place water and vinegar into mixing bowl. Brush simmering basket with oil, insert simmering basket and boil 12 min/100°C/speed 1 or until boiling.
- Crack 2 eggs into two separate bowls and set aside. Poach 3 min/100°C/speed 3, adding eggs 1 at a time through hole in mixing bowl lid into simmering basket. Remove simmering basket with aid of spatula and lay poached eggs onto paper towel to drain well.
- Crack another 2 eggs into separate bowls. Re-oil simmering basket and insert into mixing bowl. Reheat water 3 min/100°C/speed 1 or until boiling. Poach 3 min/100°C/speed 3, adding eggs 1 at a time through hole in mixing bowl lid into simmering basket. Remove simmering basket with aid of spatula and lay poached eggs onto paper towel.
- Divide patties, avocado and poached eggs between serving plates. Garnish with balsamic glaze and parsley to serve.
