Ingredients
- 70 g unsalted peanuts
- 70 g smooth peanut butter, unsweetened
- 90 g pitted dates
- 1 tsp vanilla extract
- 1 tsp agave syrup
- 130 g dark chocolate (70% cocoa solids), small pieces or callets
Instructions
- Place peanuts in mixing bowl and grind 20 sec/speed 7. Scrape down sides of mixing bowl with spatula.
- Add peanut butter, dates, vanilla extract and agave syrup then mix 10 sec/speed 7. Form mixture into small balls (approx. 20), transfer to a plate then place in fridge for 5 minutes. Meanwhile, clean and dry mixing bowl.
- Place chocolate in mixing bowl and melt 4 min/40°C/speed . Scrape down sides of mixing bowl with spatula then melt again 1 min/40°C/speed . Using a fork, dip each ball in melted chocolate until completely covered. Place on an oiled plate to prevent sticking and return to fridge for a further 15 minutes.
- Serve when set.
