- 40 g hazelnuts, blanched
- 180 g dark chocolate, approx. 54% cocoa solids, pieces or callets
- 180 g unsalted butter, diced, plus extra for greasing
- 4 large eggs
- 150 g caster sugar
- 35 g plain flour
- 250 g double cream, for serving
- 300 g mixed fresh red berries, for serving
Instructions
- Preheat oven to 170°C. Grease and line base of a cake tin (Ø 20 cm) with baking paper then set aside.
- Place hazelnuts and chocolate in mixing bowl then grind 10 sec/speed 9.
- Add butter and chop 10 sec/speed 6. Scrape down sides of mixing bowl with spatula.
- Insert butterfly whisk. Add eggs and sugar then whisk 5 min/speed 3. Remove butterfly whisk. Scrape down sides of mixing bowl with spatula.
- Add flour and mix 10 sec/speed 4. Scrape down sides of mixing bowl and mix again 5 sec/speed 4. Transfer mixture to prepared tin and bake for 25-30 minutes (170°C) until outside is firm and middle is just set (there should be slight movement in the middle). Allow to cool completely in tin before removing to a serving plate. Serve cold with double cream and fresh berries.
