- When baked, the sides of the fondants should be set but the centre will be soft and runny.

- 90 g unsalted butter, diced, plus extra for greasing
- 200 g golden caster sugar
- 95 g dark chocolate, 70% cocoa solids minimum, pieces or callets
- 50 g plain flour
- 2 large eggs
- 1 egg yolk, from large egg

Instructions
- Preheat oven to 230°C and grease 6 ramekins (7.5 cm x 4 cm) then set aside.
- Place sugar in mixing bowl and grind 25 sec/speed 10. Transfer to a bowl and set aside.
- Place chocolate and butter in mixing bowl then chop Turbo/1 sec/2 times. Scrape down sides of mixing bowl with spatula then melt 2 min/50°C/speed 1. Scrape down sides of mixing bowl again then melt 30 sec/50°C/speed 2.
- Add flour, reserved icing sugar, eggs and egg yolk then mix 15 sec/speed 4. Scrape down sides of mixing bowl and mix again 10 sec/speed 4. Transfer to prepared ramekins and bake 13 minutes (230°C). Remove from oven and serve immediately while warm and centres are still molten.
