Summer Dinners
Fresh summer recipes are a must-have for any home cook. Go-to flavours for easy yet satisfying meals include lime, coriander, lemon and mint. Fruit-infused vinegars infused also pair well with most summer salad dishes and sides. And if you are not sure what to serve around the pool, fresh cut fruit and ice cold drinks are always a winner.
Whether cooking lunch or supper, create lightness in meals on hot days by garnishing with fresh herbs, yoghurt, lemon or lime. Adding a salad to meals will also create a light summer feel. Other ways to craft lighter nutritious meals include switching meat for vegetables, grilling instead of frying, and using olive oil instead of butters.
Summer Desserts
While most desserts are satisfyingly sweet, summer desserts have that fresh cool taste we crave on summer days. Ice-cream, yoghurt, and fruit-topped or filled desserts replace warm baked dishes when the weather is warmer. The plus side is that summer desserts are usually easier to prepare and require less time in in the kitchen.

Fresh infusions for summer days
So, you have the lunch and dessert down, but what about drinks? While fruit juices and cold drinks are popular summer choices, nothing beats a home-made water infusion of fresh herbs and fruit. Water infusions are healthy and fresh, and easy to prepare which makes them popular when entertaining. Not sure where to start? Try infusing strawberry, lemon and mint in filtered water overnight in the fridge. Other great combinations to try include orange and lime, or strawberry and pineapple.
Tips for serving a Chai Latte
- Some useful items to keep close; bowl, cling film, freezable containers (e.g. aluminium, silicone), freezer, refrigerator, sharp knife, container, fine-mesh sieve, dessert glasses.
- Keep left over ice cream in freezer for up to 2-3 days.
Ingredients
Chai latte ice cream
- 180 g sugar
- 680 g cream, min. 30% fat
- 1 ½ tbsp black tea leaves, dried
- 1 tsp ground cinnamon
- 1 tsp ground cardamom
- ¾ tsp ground cloves
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- ½ tsp fennel seeds
- 8 egg yolks
- 340 g milk, min. 3,2%
- ½ tsp salt
Chocolate sauce
- 100 g chocolate, in pieces
- 250 g cream, min. 30% fat
- 50 g butter, cut in pieces
- 30 g honey
- ½ tsp natural vanilla extract
- 1 - 2 pinches salt
- 4 - 6 ice cream cones or 4 - 6 waffle biscuits
- whipped cream, for serving (optional)

Instructions
Chai latte ice cream
- Place sugar in mixing bowl and grind 10 sec/speed 10. Transfer to a bowl and set aside.
- Place cream, black tea, cinnamon, cardamom, cloves, ginger, nutmeg and fennel in mixing bowl, then heat 10 min/95°C/speed 2.5. Transfer to a bowl, cover with cling film and set aside to steep for approx. 10 minutes. Meanwhile, continue with recipe. Rinse mixing bowl.
- Place reserved sugar, egg yolks, milk and salt in mixing bowl then start Thicken /80°C. Strain infused cream through a fine-mesh sieve into a second bowl. Discard tea leaves and spices.
- Add infused cream and heat 3 min/70°C/speed 2.5. Pour mixture up to 4 cm high into shallow freezable containers (e.g. aluminium, silicone) or 3-4 ice cube trays and cover with cling film. Allow mixture to cool completely before placing in freezer for at least 10 hours. Meanwhile, continue with recipe. Clean mixing bowl.
Chocolate sauce
- Place chocolate in mixing bowl and grate 5 sec/speed 6.
- Add cream, butter, honey, vanilla extract and salt then heat 6 min/80°C/speed 1. Transfer to a bowl and allow to cool completely. Clean mixing bowl.
- Place frozen ice cream in refrigerator for 5-10 minutes, then cut into pieces (4 cm x 4 cm) with a long sharp knife. Place half of the pieces in mixing bowl and crush 20 sec/speed 6, then mix 10 sec/speed 4 with aid of spatula. Transfer to a container.
- Place remaining pieces of ice cream in mixing bowl and crush 20 sec/speed 6, then mix 10 sec/speed 4 with aid of spatula. Transfer to container with ice cream and smooth surface with spatula. Freeze for at least 4 hours or until desired consistency is achieved.
- Break ice cream cones into pieces. Place 1-2 tbsp crumbled ice cream cones in a serving glass, top with 1-2 tbsp whipped cream, drizzle with 1 tbsp chocolate sauce (spreading around sides of serving glass) and top with 2 scoops chai latte ice cream. Add a second layer of crumbled ice cream cones, whipped cream, chocolate sauce and top with 2 more scoops chai latte ice cream. Garnish with whipped cream and chocolate sauce and serve immediately (see tip).
